I remember the new I had the pleasure of eating beef brisket. It was as of this fabulous little Barbecue Restaurant in Croton-On-Hudson, NY called Memphis Maes.

New York isn't famous for its BBQ, so my wife and I were a little skeptical. But if we took our first bite in the "Texas BBQ Beef Brisket", we became believers! My wife then looked at me and said , "You must make this!" Not wanting to allow the lovely wife down, I took it upon myself to try and recreate the BBQ brisket in your own home. I don't own a smoker, so I required to improvise and cook the brisket within the oven.

Believe it or otherwise, the oven constitutes a pretty good BBQ brisket. Many BBQ enthusiasts will advise you a smoker could be the best way in order to smoke brisket, but I let you know from experience this may not be true.

The secret to your good beef brisket is to prepare it nice and slow about 225 degrees for several hours. So if you are trying to find a simple and fast meal tonight, cooking brisket within the oven isn't best option.

You will have to prepare this particular recipe one day beforehand and you'll have to plan some additional time to cook the brisket since it takes many hours in order to complete cooking.

Lets Talk About Dry Rubs

There are a variety of different dry rub recipes you need to use to your beef brisket. One such recipe is listed below. Don't be shy together with your dry rub. You want to really coat the brisket well. Its not known as a rub for nothing, so really rub those spices in the meat along with your hands. After the rub may be applied put the brisket in the fridge and allow it to go marinade instantly.

DRY RUB

  • 1/4 Cup Paprika
  • 1/4 Cup Light Brown Sugar
  • 2 Tbs Chili Powder
  • 2 Tbs Kosher Salt
  • 2 Tbs Freshly Cracked Black Pepper
  • 1 1/3 Tbs Granulated Garlic
  • 1 1/3 Tbs Granulated Onion
  • 2 Tsp Ground Cumin

THE SAUCE

We take some kind of liquid to slowly braise the brisket in the oven. Braising is a superb way to prepare brisket in the oven because it keeps the brisket moist and very tender.

What I do is mix the right quality ready-made barbecue sauce after a little beef broth to thin it somewhat. I like to use a smoke flavored barbecue sauce. To give it a bit more smoky flavor, I also add a few drops of liquid smoke. This makes a very tasty braising liquid.

LETS START COOKING ALREADY!

Before we start cooking, lets do some preparation.

Remove the brisket from the fridge leave it on the counter for 30 minutes roughly to allow for it to find room temperature.

Get your baking dish with a tight fitting lid large enough to hold your brisket.

Mix equal areas of barbecue sauce and beef broth. I like to create enough in order that the brisket is a least half submerged. Pour this mixture in your baking dish.

Pre-heat your oven to 225 Degrees.

Heat up a big pan over medium heat and add enough oil to hide the pan. Add the brisket for the pan and brown on the sides until it forms a great crust.

Place the browned brisket in the baking dish while using braising liquid. Put the lid on and put it within the pre-heated oven.

About halfway with the cooking process, flip the brisket over so your other side has time to cook inside the braising liquid.

The brisket is completed when it is fork tender and possesses an internal temperature of about 185-200 degrees F. The amount of time it requires in order to smoke a brisket within the oven really depends around the weight of the brisket. Figure 1 1/2 to 2 hours per pound of meat.
